Our cooking starts with where we are. We pair the best of Cornwall's fresh produce and locally caught seafood with authentic ingredients from Spain — championing local suppliers at every turn.

Cornish & Local

Our menus are built with championing local suppliers and produce in mind, whilst taking inspiration from Spanish flavours and classic tapas dishes. We use local butchers, fisheries and veg growers wherever we can.

Low Waste

Our chefs use as much of every ingredient as they can — lemon ends become our own lemon salt for fish dishes, pork belly ribs head to the specials board, and veg trimmings are turned into stocks and sauces. Takeaway boxes and bags are always on hand to help guests avoid food waste, and they’re recyclable or reusable.

Cleaning Sustainably

We work with a cleaning company that uses eco-friendly, natural products for our daily restaurant clean and the laundry services they provide — so caring for the space is as considered as caring for the coast.

It takes a village.

Great tapas starts with great ingredients. We work hand-in-hand with local butchers, fisheries and veg growers, and use Cornish suppliers for everything on our menu bar the must-haves from Spain. When availability gets in the way — such as a recent algae outbreak that left our usual Porthilly mussels unavailable — we’ll make a temporary switch further up the country, but always with the same care.

Where authenticity calls for it, we import the Spanish essentials — naturally cured Serrano ham, olives, chorizo, pimentón, Manchego and our paella rice — because the alternatives simply aren’t the same.

It carries through to the bar, with St Austell Brewery for our staples, The Cornish Wine Company for our wines, and local spirits including Tarquins Gin, Connie Glaze Vodka and Tinner Bros Whiskey. Even our front-of-house uniforms — shirts and outerwear — are designed and made here in Bude, so there are no shipment emissions.
